on healthy tasting foods

for someone who loves sweets as much as i do, i have a good appreciation for non-traditional baked goods. i love the oversized vegan cookies at soy luck club, have been known to go for seconds when babycakes birthday cakes appear in the office, and find organic nectars’s raw gelato strangely satisfying. that said, the idea of gluten-free baking mixes never appealed to me: i’m not celiac, and i don’t like care for packaged mixes. but when a good friend told me that his friend was launching a line of healthy gluten-free mixes i was intrigued - for one thing, it’s hard to bake things without gluten unless you are willing to stock up on a pantry of strange flours and alternative binders. purely elizabeth was started by dietitian and avid triathlete elizabeth stein so i knew the baked treats would be healthy; i was happily surprised to find that they are also really tasty. a couple weeks ago i cooked dinner for a celiac friend and turned the apple muffin mix into a cake; as we speak i have the blueberry muffins baking — only with chocolate chips instead of fruit. healthy only goes so far.
